Duck Liver ...

I slaughtered some of the Indian Runner ducks today ... and I took the time to save all the livers.  I'll never let the livers go to waste ever again, as this is a beautiful starter or meal ...

This is a very simple recipe for any duck liver.


2 - 3 Duck livers
1 Spring Onion (white part shredded fairly fine, green part shredded)
1 Slice of bread ... toasted
Slice of fresh ginger, shredded
1 Garlic Clove, shredded
Dash (teaspoon) of Soy Sauce
½ Teaspoon of brown sugar
2 Tablespoons of Olive Oil

Add the ginger, white part of the spring onion, garlic and Olive Oil to a wok or frying pan ... cook until soft.  Add the sugar and livers ... brown on both sides.  Don't overcook it as the livers are at its best medium done.
Smear the toast with Olive Oil, add the livers and garnish with the rest of the spring onions... Done!!!
